I am the best mouser in our house (and we have three cats!) Like you, I found that rodents can eat peanut butter or cheese right off a trap without springing it. So I took to cooking a piece of turkey bacon until it was just shy of crispy, then I threaded a needle and “sewed” it onto the trap.
